
My little family and I are always looking for a hearty, flavour-packed meal. My Southern Spice Sundried Tomato Turkey Chili brings together smoky spices, lean protein, and rich Mediterranean-inspired ingredients. This comforting bowl of goodness combines tender turkey with the deep, tangy sweetness of sundried tomatoes and a warming blend of Southern-inspired seasonings. It’s perfect for busy weeknights, meal prep, or cosy weekends, this chili delivers bold flavour in every spoonful while keeping things wholesome and satisfying. Below is a video and recipe for you.

Ingredients
- Turkey mince x 500g
- Spring onions x 8 – 10
- Carrot x 1
- Courgette x 1
- Mild chili powder x 1 tsp
- Smoked paprika x 1 tsp
- Garlic granules x 1 tsp
- Onion granules x 1 tsp
- Cayenne pepper x 1 – 2 pinches or more
- Chicken stock x 200mls
- Sundried tomatoes x 8 – 10
- Olive oil
- Salt and pepper to taste
- Coriander x 1 handful
Method
- Slice the top and the bottoms from the spring onions.
- Next slice the onions into half centimetre pieces.
- Peel the carrot and courgette.
- Grate the carrot and courgette.
- If the pan is getting to hot turn the heat down and add a little water to the base.
- Slice the sundried tomatoes.
- Set these ingredients to one side.
- Put the large pan onto a high heat on the hob.
- Add oil to the base.
- When the pan is hot put the spring onions in.
- Fry until the onions starts to soften.
- Add in the grate carrot and courgette.
- Fry for a couple of minutes.
- Then add in the turkey mince and fry until in turns white.
- Sprinkle over the mild chili powder, smoked paprika, onion granules, garlic granules, cayenne pepper and salt and pepper to taste.
- Pour over the chicken stock.
- Add in the sundried tomatoes.
- Turn the heat back up and bring the pan to the boil.
- When it starts to boil turn the heat back down and leave to simmer for 10 – 15 minutes.
- Chop the coriander and add to the pan.
- Stir in until it wilts down.
- Serve the chili with corn chips or rice, guacamole and cheese or nutritional yeast
- For my husband and sons portions I preheated the oven to 200°C.
- I took half the mixture and added it to a baking tray along with corn chips and grated cheese.
- When the oven has preheated I put the baking tray in and cooked the chili until the cheese melted.
- Finally enjoy.
