Equipment
- Baking tray x 3
- Sharp knife
- Chopping board
- Vegetable peeler
- Grater
- Small oven proof dishes x 6 (or a muffin tray)
- Fork or small whisk
- Teaspoon
Ingredients
- Sausages x 6 – 8
- Bacon x 6 – 8 rashers
- Eggs x 6 – 8
- Spring onions x 4 – 6
- Courgette x 1 small
- Dried mixed herbs x 1 tsp
- Cheese x 80g optional or nutritional yeast x 8 tablespoons
Method
- Preheat the oven to 200°C or gas mark 6.
- Remove the packaging from the sausages and pierce whole in them with the fork.
- Place them into the baking tray and put them into the oven for 20 minutes.
- While the sausages are in the oven prepare the bacon.
- Again remove the packaging and place the bacon onto a baking tray.
- After 15 minutes place the bacon into the oven and cook for the remaining 10 minutes.
- At this point it might be a good idea to turn the sausages so they cook on both sides.
- Once the sausages are browned and the bacon fat has turn brown remove from the oven.
- Remove the baking trays from the oven and leave to cool.
- While the sausages and bacon are cooling prepare the eggs.
- Cut the tops and bottoms from the spring onions and then slice them into half centimetre pieces.
- Peel the courgette and grate it.
- Set these ingredients aside.
- Crack one egg into each individual oven proof dish or muffin tray hole.
- Scramble the egg as you go.
- Once the eggs are cracked and scramble add in the spring onions and courgette as evenly as you can.
- Slice the sausages and bacon.
- Place one sausage in each dish or muffin hole and one slice of bacon too.
- Grate the cheese and add a little to each hole.
- Mix all of the ingredients together.
- Preheat the oven again to 180°C or gas mark 5 if not already preheated.
- Once it heated put boiling water into a baking tray and place the oven proof dishes of muffin tray into the tray.
- Carefully place the tray into the oven and bake for around 15 – 20 minutes or until the egg bites turn a lovely gold brown colour.
- Once brown remove from the oven and serve with chip and / or beans.
- Then enjoy.
