
We love meals that are quick to make but packed with flavour? 🌶️🍜 My latest blog recipe for Spicy Pork and Sundried Tomato Noodles combines tender pork mince, rich sundried tomatoes, warming spices and noodles for a satisfying dish that’s perfect for busy weeknights or whenever you fancy something a little different.

Equipment
- Sharp knife
- Chopping board
- Vegetable grater
- Large saucepan
- Teaspoon
- Tablespoon
- Stirring spoon
Ingredients
- Pork mince x 500g
- Onion x 1
- Garlic cloves x 2
- Carrot x 1
- Hot or mild chili powder x 1 tsp
- Smoked paprika x 1 tsp
- Ground Ginger x 1 tsp
- Cayenne pepper x 1/4 – 1 tsp (depending on how spicy you like it.)
- Dried mixed herbs x 1 tsp
- Tamari x 2 tbsp
- Tomato puree x 2 tbsp
- Chicken stock x 300mls
- Sundried tomatoes x 4 – 8
- Spinach x 2 handfuls
- Coriander x 2 handfuls
- Salt and pepper to taste
Method
- Peel, slice and dice the onion.
- Peel the carrot and grate it.
- Squash the garlic cloves under the blade of the knife and remove the skins.
- Slice the clove.
- Put the large pan onto a high heat on the hob and add oil to the base.
- Leave the pan to heat up.
- Once the pan is hot add in the onions and fry until they start to soften.
- Next add in the garlic and fry for 30 seconds or so.
- Just until you can smell and it starts to turn golden.
- Now add in the grated carrot and fry for a couple of minutes.
- If the pan is getting to hot turn the heat back down and add a little water to the base.
- Put the pork mince into the sauce pan and break up with the spoon.
- Fry until it turns white/golden in colour.
- Sprinkle in the hot or mild chili powder, smoked paprika, ground ginger, cayenne pepper, dried mixed herbs and salt and pepper to taste.
- Stir these ingredients into the spices and herbs.
- When everything is well combined add in the tamari and tomato puree.
- Pour over the chicken stock and stir these ingredients in.
- Turn the heat back up and bring the stock to the boil.
- Once boiling turn the heat back down and leave to simmer.
- Chop the sundried tomatoes into small pieces and put these into the pan as well.
- Meanwhile cook the noodles as per the packet instructions.
- Chop the spinach and coriander.
- Add these ingredients to the pan and stir until the wilt down.
- Finally serve the pork with the noodles.
- Then enjoy.
