
🌶️🍲 My Meat Feast Chilli is a hearty, warming and flavour packed meal! It’s made with chicken mince and plenty of delicious ingredients. This is a comforting family dinner that’s full of rich flavours and a little bit of spice. It’s easy to make, wonderfully satisfying and perfect for enjoying with rice, tortilla chips or your favourite toppings.

Equipment
- Sharp knife
- Chopping board
- Large suacepan
- Teaspoon
- Stirring spoon
Ingredients
- Chicken mince x 500g
- Chroizo x 100g
- Parma ham x 4 slices
- Onion x 1
- Courgette x 1
- Red pepper x 1
- Mild chili powder x 1 tsp
- Smoked paprika x 1 tsp
- Cayenne pepper x 1/4 tsp
- Onion granules x 1 tsp
- Garlic granules x 1 tsp
- Dried oregano x 1 tsp
- Chicken stock x 200mls
- Salt and pepper to taste
- Spinach x 1 – 2 handfuls
Method
- Peel, slice and dice the onion.
- Next peel the courgette using the vegetable peeler and then grate it.
- Cut the top from the red pepper.
- Remove the core and the stalk.
- Slice and dice the flesh.
- Score a line down the chorizo with the sharp knife then peel the skin from it.
- Now slice the chorizo into half centimetre pieces.
- Next slice the parma ham.
- Put a large saucepan onto a high heat on the hob and add oil to the base.
- When the pan is hot, add in the chorizo and start to fry.
- Fry until the oil from the chorizo starts to appear in the pan.
- Then put the Parma ham ad fry until it start to brown.
- Next add in the onion and fry for until it starts to soften.
- Then add in the pepper and fry for a good five minutes until it starts to soften too.
- Now add in the courgette and fry for a further minute or so.
- Next add in the chicken mince and fry until it turns white ish.
- Sprinkle over the mild chili powder, smoked paprika, cayenne pepper, onion granules, garlic granules and dried oregano.
- Pour over the chicken stock and stir these ingredients in.
- Once the stock comes to the boil turn the heat down and leave to simmer.
- Cook the rice.
- Once the rice is cooked chop the spinach and add it to the meat sauce.
- Let the spinach wilt down in the pan and remove from the heat.
- When the rice is cooked serve with the sauce.
- Then enjoy.
