Oven Baked Apple and Blueberry Chia Seed Jam

Oven Baked Apple and Blueberry Chia Seed Jam

This delicious oven-baked Apple and Blueberry Chia Seed Jam is a homemade jam but it’s something a little different. It’s definitely worth trying! The jam is made with juicy blueberries, sweet apple and nutritious chia seeds. It’s beautifully fruity, naturally delicious and so easy to make. I love that the oven does most of the work, creating a lovely thick and spreadable jam that’s perfect on toast, pancakes, porridge or stirred through your favourite breakfast. 💕

Equipment

  • Vegetable peeler
  • Sharp knife
  • Chopping board
  • Large Mixing bowl
  • Tablespoon
  • Teaspoon
  • Stirring spoon
  • Baking tray

Ingredients

  • 2 medium apples, peeled, cored and chopped
  • 200g blueberries, fresh or frozen
  • 2 tbsp chia seeds
  • 1–2 tbsp maple syrup or honey, optional
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2–3 tbsp water

Method

  • Preheat the oven to 200°C fan or 180° or gas mark 5.
  • Peel, core and chop the apples into 1 centimetre pieces.
  • Add the chopped apples and blueberries to a large mixing bowl.
  • Stir in the lemon juice, chia seeds and vanilla extract.
    • If you would like the jam sweeter, add the maple syrup or honey.
  • Bake for 25–30 minutes, or until the apples are soft and the blueberries have released their juices.
  • Remove from the oven and leave to cool.
  • Add a little bit of water then mash the fruit with a fork or potato masher.
    • If it needs more water add a little at a time until it’s at a consistency you like.
  • You can leave it slightly chunky or mash it until smoother.
  • Leave the jam to cool for about 10–15 minutes, stirring occasionally. The chia seeds will absorb the liquid and thicken the jam.
  • Transfer to a clean jar and allow it to cool completely before refrigerating.
  • Keep refrigerated and use within about 5–7 days.
  • Delicious spread on gluten-free toast, stirred into porridge, spooned over pancakes or used as a filling for cakes and breakfast bars.
