Gluten Free Breaded Salmon with Spicy Chips and Broccoli

As I’m sure you are aware my son Ted and I are huge fans of fish and salmon is one of our favourites. I always try to include different meals in our menu each week but fish is one food group I always find difficult to invent meals. So when an idea hits me I have to go with it when it comes to fish dishes.

In the past I have made gluten free fish fingers but I have never just made a crusty topping for a piece of fish. To be honest, I wasn’t sure how my son would react to this meal. He can be a really fussy eater even when it comes to fish. However he loved it. ‘It’s fish’, he declared to me, ‘of course I like it.’

Fussy eater or not, fish is always a winner with Ted and I’m sure it will be a meal that’s greatly received by your families too. It’s a healthy meal that’s packed full of goodness. We really enjoyed it and we are sure you will too.

Serves 4

Gluten Free Breaded Salmon with Spicy Chips and Broccoli

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Mixing bowl
  • Teaspooon
  • Tablespoon
  • Baking tray

Ingredients for the Gluten Free Breaded Salmon

  • Salmon x 4 fillets
  • Ground flax seed x 6 heaped tbsp
  • Dried mixed herbs x 2 tsps
  • Olive oil x 3 tbsp

Method for the Gluten Free Breaded Salmon

  • Preheat the oven to 180°C or gas mark 4.
  • In the mixing bowl put the ground flax seed, dried mixed herbs and olive oil.
  • Stir these ingredients together until they form a thick paste.
  • Spread the flax seed paste over the fillets as evenly as possible.
  • Place the fillets into the baking tray.
  • Put in the oven for around 12 – 15 minutes.
  • If the fish pulls away easily with a fork it’s cooked.
  • Leave to stand for 5 minutes then serve with spicy chips.

Ingredients for the spicy chips

Spicy Chips
  • Sweet potato x 600g
  • Olive oil x 2 tbsp
  • Garlic granules x 1 tsp
  • Ground ginger x 1 tsp
  • Ground tumeric x 1 tsp
  • Ground cumin x 1 tsp
  • Ground coriander x 1 tsp
  • Smoked paprika x 1 tsp
  • Ground sweet cinnamon x 1 tsp

Method for spicy chips

  • Preheat the oven to 180°C or gas mark 4.
  • Peel the potatoes and cut into chips.
  • Put the sweet potato chips into the baking tray.
  • Drizzle over the olive oil and then sprinkle over the herbs.
  • Toss all of these ingredients together.
  • Place the baking tray in the oven and bake for 25 – 30 mins or until golden brown.
  • Serve with the chips and broccoli or salad.

Gluten Free Breaded Salmon and Spicy Chips was a simple and easy dish. It took a short amount of time to prepare and cook this dinner. So I think it would make a great mid week meal. To make this even quicker you could prepare the spices and the ground flax seed and herb crumb. Then all you have to do is mix the olive oil into the ground flax seed and spread it across the salmon. However you decide to eat this yummy fish dish, as always, please enjoy.
