5 Chicken Dinners

The weekends are when we normally eat meat. On Friday and Monday we will eat a fish meal but on Saturday and Sunday we will eat meat meals. Chicken dinners are one of our favourites and we always buy our meat from a local butchers. The butchers is not organic but the chicken is herb fed and ethically reared.

Five years ago I decided to start buying meat from a local butchers that sells grass fed and herb fed meat. I wanted to be kinder to the environment and to our bodies as well. I had been reading studies that suggested people who eat grass fed beef occasionally can receive healthier amounts of essential fats compared to those would chose grain fed meat.

Plus by choosing local produce we are supporting the local economy. Chicken dinners are always massive winners in this house, but even more so now we eat herb fed chicks. Below are five of our favourite chicken dinners we love and we hope you will too.

Chicken Wrapped in Parma Ham with Rosemary and Garlic Butter

One Sunday in a month I will cook a roast dinner. I normally buy a large roast chicken and this will feed us for several meals. Plus I also stew the bones in my slow cooker for stock. As a family we quite often fancy more than one roast chicken a month. Therefore I will quite often cook the breasts of chicken instead of a whole bird.

Many years ago, a friend of mine would often cook chicken in this way. It would feed her little family of three perfectly. There is also a little less washing up and I don’t have to remove the meat from a large chicken to store it in the freezer. So less mess too. A win, win, for me.

To make the meal more interesting I often add herbs to the baking tray. On this occasion, I decided to add parma ham or you can use prosciutto ham as well. By wrapping the chicken in parma or prosciutto ham it makes the chicken very juicy and tender. It makes a delicious change from our usual roast chicken.

Slow Cooker Creamy Chicken Tikka Masala

Once upon a time, an Indian takeaway would have been an ideal Saturday night treat. My husband Howard is very much a Chinese takeaway kind of guy and I do like a Chinese too. Although, nothing beats an Indian meal for me.

In recent months, I have been experimenting with spices and mixing them into all different kinds of meals. I have also been looking at what to use in a Masala. If I was ordering an Indian now this would be one dish I would always consider.

Nowadays I don’t need to consider it as I’ve learned how to cook it to perfection. We ate this on a Saturday and it was such a tasty treat. Plus it was made in the slow cooker so felt like we’d been to the takeaway to buy it.

Creamy ‘No Cream’ Chicken Stew

Sundays are lazy days in our house. During the week, in normal circumstances, we are normally always on the go. In the past year or so we have slowed down a lot due to the lock downs. Although, now life seems to be going back to normal I find the weeks are starting to get busy again. We always try to have a lazier day on a Sunday.

With a lazy day comes a very easy meal most of the time. I really enjoy using my slow cooker during the week but on weekends I love to use it too. For me, a slow cooker makes a meal seem like the fairies have been and cooked the dinner. I like to prepare the ingredients the night before and leave it in the slow cooker. In the morning all I have to do is switch the cooker on and that’s lunch or dinner done.

Slow Cooked Chicken and Chorizo Chilli

In our house, my husband Howard and son Ted love chicken and chorizo sausages. Howard and Ted would eat chicken and sausages all day long if they were given the option. For me, I really enjoy adding spices to my dishes and I love making different flavour combinations.

So I decided to put the chicken and chorizo together and add a few spices I would normally use as part of a chilli. Plus I added a couple of extra spices like the Sumac and garlic granules too. I was very unsure of the end result but I was pleasantly surprised by the outcome of this dinner. It was so tasty. My little family thoroughly enjoyed this meal. It’s one I will be making again.

Chicken Noodle Soup

Whenever I hear a person say, ‘Chicken Noodle Soup’ it always reminds me of the TV series Friends. You know the one where Rachel asks Joey to make Chicken Noodle Soup sound sexy and he does! So when I decided to make this dish for my little family all I kept thinking during the cooking process was ‘Chicken Noodle Soup’.

Before I started making this meal I thought about how to make a soup with the leftover chicken we had in the freezer. I always buy a large chicken from our local butcher and freeze any leftovers. That’s when Chicken Noodle Soup came to my mind. It was then I knew I had to make this dish. My family and I really enjoyed this soup and it’s one we will be having again.

Roast Chicken Wrapped in Parma Ham

These 5 chicken dinners are great for weekends but also weekdays too. Although we normally eat meat on the weekends occasionally I will make a big batch of one of these meals and freeze it for a very quick mid week meal. All of the ingredients in these dishes, apart from the noodles, are freezable. Therefore you could make double of each meal and freeze it for another occasion.
