
Now I know there is a certain commercial restaurant that sells this type of soup and I’m sure it’s really delicious. Honestly, for me, nothing beats homemade food, especially soup. In recent months I have been experimenting with miso paste and I have found it to be really versatile. It works well in soups and stews.
The paste itself is fermented and it’s made by inoculating a certain mixture. The mixture is made of soybeans and a mold called Koji. I know that eating mold does not sound very appetizing but trust me it’s so yummy. Plus eating fermented food is really good for the gut. Therefore not only is this dish super healthy but it’s also super tasty too.

Equipment
- Sharp knife
- Chopping board
- Colander
- Teaspoon

- Serving/stirring spoon
Ingredients
- Salmon x 500g
- Spring Onions
- Ginger x 1 inch piece
- Garlic x 2 cloves
- Carrot x 1
- Courgette x 1
- Green beans x 4 handfuls
- Chicken stock or bone broth x 800mls
- Miso paste x 1 tbsp
- Tomato puree x 1 tbsp
- Apple cider vinegar x 1 tbsp
- Ground sweet cinnamon x 1 tsp
- Dried mixed herbs x 1 tsp
- Salt and pepper
Method
- Remove the tops and tails from the spring onions.
- Cut the spring onions into half centimetre pieces.
- Peel the ginger and cut into thin strips.
- Now peel the garlic and slice it thinly.
- Next peel the carrot and courgettes and cut into thin batons.
- Put these ingredients into the slow cooker.
- Add the rest of the vegetables.
- Then add in the chicken stock, miso paste, tomato puree, apple cider vinegar, ground sweet cinnamon, dried mixed herbs and salt and pepper to taste.
- Put the slow cooker on high for 4 hours or low for 8 hours.
- Thirty minutes before the end, add in the noodles and cook until ready to serve.
- Remove the skin from the salmon and cut into 1 inch pieces.
- Put the salmon into the slow cooker and cook with the noodles.
- Once the noodles are cooked and the fish is flaky, all that it left to do is serve and enjoy.

Slow Cooker Miso Salmon Noodle Soup was a delicious dish that we all enjoyed. My son Ted loves his mum’s noodle soups. I knew when I told him what was for dinner he would be excited. When we ate this dish I don’t think we had a noodle dinner for a while. So it was very well received by my little family. The soup was easy to prepare and cook as well. We used rice noodles for this meal so we could freeze it. If you did want to make a big batch I would check the noodle packet to make sure they are freezable.
