3 Healthy Vegan Breakfasts

Breakfast! It’s the most important meal of the day but if your on a vegan diet it can be hard to know what to eat. A lot of people will often reach for the cereal or toast. Both will probably include dairy unless you can’t eat it. Instead porridge or smoothies are a brilliant first meal of the day. The best part about these breakfasts is you can prepare them the night before and simply cook them the next day. A great way to stay warm and well on a cold winters morning.

Orange and Sweet Cinnamon Warm Smoothie

During winter oranges are a great food to have to hand. As many of you will know oranges are high in vitamin C which can help to protect our bodies against common colds and flu. The delicious citrus fruit can also help to make collagen. Collagen can help to heal wounds and it can make skin look smoother. Plus they are great immune boosters and they can boost the body immune system to fight against diseases.

Winter is a good time to start eating more warming foods too. Hence the reason why I heat up my smoothie bowl in the morning. Warm foods help our bodies fight the cold weather. Spices are also a great way to help protect the body against winter illness. Sweet cinnamon is a delicious spice that tastes so yummy in this smoothie bowl. For me, knowing I’m feeding myself warming meals through winter can help me feel better during this cold season. This smoothie is definitely one I will warm up every winter.

Chocolate Ginger Porridge

When it comes to my porridge I have to be honest I’m a creature of habit especially at breakfast time. Normally I will always choose cinnamon as a natural sweeter for my porridge. One morning I went to the cupboard for my little sweeter and it was gone. I had put the last of the cinnamon in a recipe the day before. I needed get more cinnamon next time we went shopping.

Instead of the sweetness I decided to add a little spice. The ginger was looking at me from the shelf in the pantry. Therefore I decided to try it in my porridge. Ginger is a popular spice in lots of recipes. I like to use it in curries, soups and stews too. It’s a delicious spice that can help to flavour a very plain meal. Plus it works really well with chocolate. It made this porridge sweet and spicy. A great way to kick start the morning.

Chocolate Orange Quinoa Porridge

Recently I started eating quinoa for breakfast. It’s another healthy alternative to my usual porridge that I love to eat in the morning. In case you didn’t know, quinoa is a seed that is grown from a grain and it’s gluten free too. You can make so many different dishes with quinoa, and porridge is just one of many.

Breakfast to me is the most important meal of the day so I’m always trying to change my menu in the morning. A change is as good as a rest as they say! I have another recipe I like to cook quinoa porridge with but I had a few oranges in my fruit bowl so I thought I would try a chocolate orange version of this breakfast. The results were amazing and I just had to share this recipe with you.

As I mentioned earlier they can be prepared the day before and then cooked in the morning. For me, preparing everything thing the night before makes mornings less stressful and more relaxed.
