
During the winter months warming food are always welcome in our house. We really love a mild chilli and over the past few years I have been experimenting with different ingredients. These 3 chilli meals are simple but very tasty. Plus they are also cheap dinners too. In all of these meals I have used dried beans and I know they are cheaper than tinned. The dried beans will need soaking overnight and cooking before use but the efforts are worth the results. All three chilli’s are yummy and well worth a try.

Slow Cooker White Bean and Potato Chilli
Suddenly I have become slightly obsessed with the humble potato. Potatoes are superior and I feel, they are the king of vegetables. They are loved by so many people. Potatoes can be cooked in a varied of ways and one way they can be cooked is in a slow cooker. I tend to use my slow cooker throughout the year. Even in the summer months I like to cook the dinner in the slow cooker.
Therefore I’m always trying to think of new meals to cook in the pot. Recently I have found potatoes to be a great food to cook in the slow cooker. They are a delicious vegetable that can taste great with or in a lot of different dishes. I think chilli and jacket potato is a lovely dinner so I thought I would put the potatoes into the pot instead. The results were amazing and I had to share this yummy potato dish with you.
To be honest, my son Ted who is eight isn’t the biggest chilli fan. When he was younger he used to love beans, especially chickpeas. When he enjoyed beans I knew he would eat any type of meal if they were in it. Nowadays I sadly can’t find a bean meal he enjoys anymore. There is just one problem I won’t give up trying to help Ted enjoy his vegetables. Especially with the beans!
The trouble with me is I’m like a dog with a bone. I don’t give up easily. My mother always tells me to keep going Alexis, you always get there in the end. I feel like telling my mum that just once I would like to arrive at my destination not having to have gone through the journey. Heck, where’s the fun in that though.
Therefore being the persistent human I can be I have once again thought of a new idea to help my son enjoy a bean meal. I hate to admit it but this dish was not Ted approved. It’s back to the pantry for me! Although, my husband Howard and I enjoyed it so I thought I’d share the recipe with you. 3 Vegan Chilli’s were delicious and very easy to cook. They are great mid week meals or good weekend dishes too. All the ingredients in these dinners id freezable. Therefore you could make large batches of the sauces and frozen for another occasion. They are also scrummy as leftover the next day too. We loved these meals and we hope you enjoy them too.
