Equipment
- Chopping board
- Potato peeler
- Large saucepan
- Colander
- Sharp knife
- Large mixing bowl
- Small mixing bowl
- Teaspoon
- Baking tray
Ingredients
- Chicken breasts x 500g
- Paprika x 1 tsp
- Smoked paprika x 1 tsp
- Cayenne pepper x 1/4 tsp
- Garlic granules x 1 tsp
- Onion granules x 1 tsp
- Dried oregano x 1 tsp
- Olive oil x 20mls
- Salt and pepper to taste
- New potatoes x 600 – 800g
- Courgette x 1
- Red pepper x 1
- Onion x 1
Method
- Preheat the oven to 200°C or gas mark 6 and put a baking tray in at the same time.
- Peel the new potatoes.
- If you like the skin on the potatoes then you don’t have to peel them.
- Set these aside.
- Place a large pan of water onto the hob and add in the potatoes.
- Put the pan onto a high heat and bring to the boil.
- Once boiling turn the heat down to a medium heat and leave to simmer for 10 – 12 minutes depending on the size.
- The potatoes must be tender around the outside and firm in the centre.
- A knife or fork should meet a little resistance when inserted.
- Once cooked remove from the heat and drain through a colander over the sink.
- Leave the potatoes to cool.
- Peel and slice the onion.
- Next peel, slice and dice the courgette into about 1 centimetre pieces.
- Slice the top from the red pepper and remove the core and the stalk.
- Now slice and dice the flesh.
- Put these ingredients into a large mixing bowl, add in the chicken breasts and the cooled potatoes.
- In the small mixing pour the olive oil and then add in the paprika, smoked paprika, cayenne pepper, garlic granules, onion granules, dried mixed herbs and salt and pepper to taste.
- Mix these ingredients together and pour over the ingredients in the large mixing bowl.
- Make sure all of the ingredients are covered in the Cajun spice oil.
- Remove the baking tray from the oven and place the mixing bowl ingredients into it.
- Spread the ingredients as evenly as possible across the base.
- Place the tray bake into the oven and bake for 25 – 30 minutes.
- If the chicken is cooked and the vegetables aren’t golden brown carefully remove the chicken and leave to rest.
- The chicken will be golden in colour and the juices will run clear.
- Put the tray back into the oven and cook for a further 5 – 10 minutes or until the vegetables are golden brown.
- Meanwhile cook green beans or a green of your choice.
- Once all the food is cooked, serve and enjoy.
