
This Prawn, Parma Ham & Melon Salad is inspired by a dish my dear dad used to make many years ago. It was always one of my favourites, combining the sweetness of melon with salty Parma ham and succulent prawns. I’ve given his classic recipe a fresh twist by turning it into a vibrant summer salad that’s light, colourful, and packed with flavour. Every bite brings back wonderful memories of family meals and happy times around the table.

Equipment
- Sharp knife
- Chopping board
- Spoon
- Tablespoon
- Large salad bowl
- Salad spoons
- Serving board
Ingredients
- Prawns x 125g
- Parma ham x 2 slices
- Cantaloupe melon x 1
- Rocket x 1 handful
- Cherry tomatoes x 10
- Cucumber x 1/2
- Carrot x 1
- Olive oil 2 tsps
- Apple cider vinegar x 1 tsp
- l;alt and pepper to taste
Method
- Start by putting the rocket into the large salad bowl.
- Slice the tomatoes in half and add them in.
- Next slice the cucumber and put this into the bowl.
- Peel and grate one carrot and put this into the bowl as well.
- Cut the melon in half and remove the seeds.
- Cut the half a melon into a quarter.
- With a sharp knife carefully slice between the flesh and the skin of the melon.
- Once the skin has been removed cut the melon in chunks and put in the chunks into the salad bowl too.
- Slice the Parma ham and add this into the salad.
- Put the prawns in.
- Pour over the olive oil and apple cider vinegar and toss these ingredients together.
- Finally serve and enjoy.
