
My husband and son love a sandwich at lunch time but I enjoy a refreshing meal that’s packed with flavour and perfect for warmer days. This Tuna, Pineapple, Cucumber and Mint Salad combines tender tuna with sweet juicy pineapple, crisp cucumber, and fragrant fresh mint to create a vibrant dish that’s both nutritious and delicious. Whether you’re after a quick lunch, a healthy side dish, or a simple dinner, this colourful salad delivers a wonderful balance of sweet, savoury, and refreshing flavours in every bite.

- Sharp knife
- Chopping board
- Small mixing bowl
- Tablespoon
- Salad bowl
- Serving spoons
Ingredients
- Tuna x 1 tin
- Pineapple x 1 handful
- Cucumber x 1/4
- Mint x 1 handful
- Rocket x 1 – 2 handfuls
- Olive oil x 1 tbsp
- Lime x 1/2
Method
- Place the pineapple on it’s side and cut the top and the bottom from the pineapple.
- To remove the skin slice downwards, along the curve of the pineapple.
- Cut deeply enough to remove the eyes.
- Now slice down the centre of the pineapple.
- Cut the two halves into quarters.
- Next remove the core by slicing the hard piece of pineapple at the tip of the quarter.
- Continue to do this to the other three quarters.
- Then slice the quarter length ways in half.
- Now dice the quarters widthways and set the pineapple pieces to one side.
- Slice the end from the cucumber.
- Cut a quarter of the cucumber off.
- Slice the cucumber lengthways in half and then cut those halves into quarters.
- Next slice the cucumber widthways into slices.
- Chop the mint and set these ingredients to one side.
- Pour the olive oil into a bowl.
- Cut the lime in half and squeeze the lime juice into the oil.
- Add salt and pepper to taste and set aside.
- Now open the tuna and drain off any excess liquid.
- Place the rocket on the bottom of the salad bowl.
- Add in the pineapple, cucumber, mint and tuna.
- Mix the salad dressing and pour it over.
- Toss the salad together using the salad spoons.
- Then serve with pasta or rice or a side of your choice.
- Finally enjoy.
