
A lot of people in the UK are not going abroad this year. Instead they are having holidays at home. Many people might not be eating out as much while they are away. Therefore I thought that it would be a good idea to give you ideas for breakfasts while you are on holiday.
These breakfasts are also good kickstarters to your normal day as well. I’m a huge breakfast fan and I know I function much better when I’ve eaten a yummy food in the morning. All of these breakfasts are really easy to cook and they will fill you up until lunch.

Tropical Fruit Millet Porridge
Millet is an ancient grain that has been cultivated and grown throughout South East Asia and Africa for thousands of years. The old grain is very versatile and it can be made into many different dishes including a porridge. It’s a great grain to take away and cook. I normally make this breakfast for myself in the morning.
My husband Howard and son Ted aren’t great fan of millet. It could be made for more than one though. I prepare this dish the night before and then all I do is turn the hob on in the morning. Then I bring the pan to the boil and leave it to simmer for 20 minutes or so. It’s so yummy and it fills me up until lunch.
Strawberry Cheesecake Sourdough French Toast
French toast is a great breakfast to eat. My husband Howard and son Ted love this one. I’m sure when we go on holiday this year they will definitely be eating this for breakfast. You could make just french toast but we do recommend eating it with the strawberries and the cream cheese.
I can’t eat this breakfast due to my gluten intolerance but I’m sure my little family will be enjoying this dish while we are away. You don’t have to make this with sourdough bread, you could make it with a bread of your choice. It’s definitely a breakfast of champions.
Many people will just add blueberries, raspberries and strawberries to a bowl of porridge. While on holiday these fruits may be harder to get hold of and store. Especially if you are only going away for a few nights. Instead of fruit I thought about using vegetables instead.
You can normally find carrots in lots of different shops and supermarkets all over the country. I like to make up the mix in a tupperware box then take this away with me. All I have to do while I’m in my holiday home is add milk and grate the carrot into it. I leave this mixture to soak overnight. In the morning I put it in the pan and cook it. That’s job done and I have a delicious breakfast to eat.
Pouched Eggs and Smoked Salmon on Sweet Potato Pancakes
For my little family this is normally a breakfast we tend to eat once a year at Christmas. As we are going on a staycation ourselves this year so I thought we could eat this breakfast while we are away. I will be making the pancakes in advance of the week ahead and then freeze them.
We are only going an hour or so from the front door so we can take a cool box with us. Alternatively you will need a nutribullet or a blender to make these before you want to eat them. If you are going by car and have a little bit of room then you can take the blender or nutribullet with you. I think this is such a delicious treat and one the will help to fill the family up until lunch.
Sweet Potato, Red Lentil and Quinoa Loaf
My final recipe is another great one that could be made in advance of a holiday and taken with you. All the ingredients in the loaf are freezable. So you could make it in advance and take it with you. If you are not going to far from home. I make this breakfast when I want savoury foods in the morning. You can eat this bread with eggs or mash avocado or even better both. It also make a great lunch as well.
It’s quick and easy to cook too. As I am gluten intolerant I can no longer eat bread so this is the perfect dish for me. The are a lot of different quinoa bread recipes on my blog so if you don’t like this one there are plenty to choice from here. It’s definitely a breakfast that helps to power me through my day.

Staycation breakfasts I think should be like eating breakfast on Christmas day. You can make a lot of these breakfasts in advance and take them with you. We will be having a food delivery to our holiday home. I know that there are a few ingredients I can get from our delivery so these I will have to take with me. If you can’t get the ingredients for these yummy dishes then you can always buy them before you leave too. Breakfast is the best way to start my day especially when we are on holiday.
