Orange and Mango Jelly

My so Ted, who is eight loves jelly and to be honest I can’t blame him. When I was his aged I loved jelly too. My nan would make jelly when I went to visit her. She would always buy a certain brand that already had the flavouring in it. All Nan would do is add hot water.

Nowadays I feel like I’ve taken this one step further. I use gelatin strips and fruit juice. The last jellies I made Ted thoroughly enjoyed them. Then I thought I could add different juices to the gelatin. As well as a different juice I also felt adding a fruit to the base would make it more interesting too. Ted really enjoyed these jellies and he asked me to make more. That’s how good these were. We loved them and we hope you do too.

Equipment needed

  • Measuring jug
  • Large saucepan
  • Stirring spoon
  • Small bowls with lids or tupperware boxes

Ingredients

  • Orange juice x 570mls or as per the packet instructions on the gelatine box
  • Mango x 1
  • Leaf Gelatine x 4 or as per the packet instructions

Method

  • Measure the orange juice into the jug.
  • Pour the juice into the saucepan.
  • Put 4 gelatine leaves into the saucepan.
  • Soak the leaves for five minutes or per the packet instructions.
  • Place the saucepan on a low heat and melt slowly.
  • Do not let the mixture boil.
  • Cut up the mango into small pieces and place the piece into the bottom of the tupperware boxes.
  • Put enough in to cover the base of the boxes.
  • Once all the gelatine has melted pour the liquid into the small bowls or tupperware boxes.
  • Finally put these into the fridge for at least 6 hours or preferably overnight.
  • When the jelly is set, serve and enjoy.

Orange and Mango Jelly was a huge hit with Ted. He loved it as I thought he would. Ted thought the mango pieces at on the bottom were like hunting for treasure. I was very pleased he enjoyed it. These jellies are a great snack or after dinner treat too. They also are brilliant in a packed lunch box too. Plus they are great all year round but even better in summer.
