Sardines on Toast with Mashed Tomatoes

In recent years, I have been unable to eat gluten. I have found it difficult to digest and it will give me a stomach ache in the middle of the night if I eat it. In recent months I have been testing myself and eating a little bit of gluten every so often. Then my husband Howard came home with a wholemeal sourdough loaf.

That evening I decided to try a slice with sardines and mashed tomatoes. I have not had sardines on toast in years. I know they are not to everyone’s liking but I love them. The tomato mash add a sweetness to the dish and it also helped to bring all these tasty flavours together. I loved this dish and I hope you enjoy it as well.

Serves 1

Equipment

  • Toaster
  • Baking tray
  • Tablespoon
  • Teaspoon
  • Fork

Ingredients

  • Sardines x 1 tin
  • Sourdough bread x 1 – 2 slices
  • Cherry tomatoes x 8 – 10
  • Dried mixed herbs x 1
  • Olive oil x 1 – 2 tbsp
  • Salt x 1 – 2 pinches

Method

  • Put the bread in the toaster and toast to your liking.
  • Turn the grill onto a high heat.
  • Put the tomatoes into the baking tray.
  • Pour over the oil and sprinkle over the herbs and salt.
  • Toss all of these ingredients together.
  • Put the tray under the grill and cook the tomatoes until they start to split and soften.
  • During the cooking process toss these ingredients again.
  • When the tomatoes split remove the tray from the grill.
  • Leave to cool.
  • Mash the tomatoes.
  • Spread them evenly over the toast.
  • Open the tin of sardines and pour drain the water.
  • Now put the sardines on top of the tomatoes on toast.
  • Then serve with a small salad and enjoy.
