Ingredients
- Chicken x 500g
- Coconut cream x 100mls
- Garam masala x 1 tsp
- Mild or hot chili powder x 1 tsp
- Fresh ginger x 2 inch piece
- Garlic x 3 cloves
- Onion x 1
- Courgette x 1
- Red pepper x 1
- Potatoes x 600 – 800g
- Chicken stock x 300mls
- Salt and pepper to taste
- Coriander x 1 large handful
Method
- Firstly slice the chicken into 1 inch pieces.
- Place the chicken into the slow cooker pot and add the coconut cream.
- Sprinkle over the garam masala and mild chili powder.
- Peel the ginger with the vegetable peeler and grate it into the pot.
- Crush the garlic into the pot with the garlic crusher.
- Next peel and slice the onion.
- Peel the courgette and slice it.
- Slice the top from the red pepper.
- Remove the core and the stalk.
- Now slice and dice the flesh.
- Next peel the potatoes and cut them into 1 inch pieces.
- Place these ingredients into the slow cooker.
- Add salt and pepper to taste.
- Pour over the chicken stock and stir all the ingredients together.
- Turn the cooker onto high for 2 – 3 hours or low for 5 – 6 hours.
- Once cooked finely chop the coriander and stir into the pot.
- Then serve with greens or a vegetable of your choice.
- Finally enjoy.
