Oven Baked Chicken Tikka Curry

This delicious recipe combines tender chicken, aromatic spices, and a creamy, flavourful sauce, all cooked to perfection in the oven. It’s a fantastic homemade curry that’s perfect for family dinners, meal prep, or whenever you’re craving a comforting takeaway-style meal.

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Large mixing bowl
  • Teaspoon

Ingredients

  • Chicken breasts x 500g
  • Coconut cream or yoghurt x 100mls
  • Onion x 1
  • Courgette x 1
  • Red pepper x 1
  • Garam masala 1 – 2 tsp
  • Mild or hot chili powder x 1 tsp
  • Ground ginger x 1 tsp
  • Ground turmeric x 1 tsp
  • Garlic granules x 1 tsp
  • Salt and pepper to taste.

Method

  • Peel, slice and dice the courgette into about 1 centimetre pieces.
  • Cut the top from the pepper and remove the core and the stalk.
  • Slice and dice the flesh into about 1 centimetre pieces.
  • Peel the onion and slice it.
  • Place these ingredients into a large mixing bowl.
  • Slice the inches into 1 inch pieces.
  • Pour over the coconut cream.
  • Sprinkle over the garam masala, ground ginger, ground turmeric, garlic granules and salt and pepper to taste.
  • Mix all of these ingredients together.
  • Preheat the oven to 200°C or gas mark 6 and put a baking tray in at the same time.
  • Once mixed together put the bowl into the fridge for 30 minutes or overnight.
  • When the oven has preheated remove the baking tray.
  • Pour the ingredients into the baking tray and put the tray back into the oven.
  • Bake for 25 – 30 minutes.
  • While the tray is the oven cook the rice and any greens you want with the dish.
  • When the juice are running clear from the chicken and the tray is golden brown remove from the oven.
  • Leave to rest for 5 minutes.
  • Then serve with rice and the greens.
  • Finally enjoy.
