Equipment
- Sharp knife
- Chopping board
- Large saucepan with lid
- Teaspoon
- Stirring spoon
Ingredients
- Beef mince x 500g
- Chroizo x 100g
- Parma ham x 4 slices
- Onion x 1
- Garlic x 2 cloves
- Courgette x 1
- Red pepper x 1
- Sundried tomatoes x 6 – 8
- Tomatoes x 1 400g tin
- Chicken stock or bone broth x 300ml
- Tomato puree x 2 tbsp
- Tamari x 2 tbsp
- Bay leaves x 2
- Dried oregano x 1 tsp
- Spinach x 1 – 2 handfuls
Method
- Preheat the oven to 160°C or gas mark 4.
- Peel, slice and dice the onion.
- Squash the garlic under the blade of the knife and remove the skin.
- Slice the flesh and set these ingredient aside.
- Next peel the courgette using the vegetable peeler and then grate it.
- Cut the top from the red pepper.
- Remove the core and the stalk.
- Slice and dice the flesh.
- Score a line down the chorizo with the sharp knife then peel the skin from it.
- Now slice the chorizo into half centimetre pieces.
- Next slice the parma ham.
- Slice the sundried tomatoes.
- Put a large saucepan onto a high heat on the hob and add oil to the base.
- When the pan is hot add in the chorizo and start to fry.
- Fry until the oil from the chorizo starts to appear in the pan.
- Then put the Parma ham in and fry until it start to brown.
- Next add in the onion and fry for until it starts to soften.
- Then add in the pepper and fry for a good five minutes until it starts to soften too.
- Now add in the courgette and fry for a further minute or so.
- Next add in the beef mince until it turns brown.
- Add in the sundried tomatoes.
- Pour over the tinned tomatoes and pour in the stock to the empty tin.
- Swirl the stock in the tin and pour into the sauce.
- It should get rid of a lot of the juice from around the outside of the tin.
- Next add in the tomato puree and tamari.
- Sprinkle over the dried oregano and salt and pepper to taste.
- Stir these ingredients in.
- Once the stock comes to the boil turn the heat down and put the lid on.
- Carefully place the saucepan into the over for 1 – 2 hours.
- Towards the end of the cooking process boil the pasta as per the packet instructions.
- Once the pasta is cooked chop the spinach.
- Carefully remove the meat sauce and the lid.
- Add the spinach to the sauce and stir it in to let it wilt down in the pan.
- Finally add the pasta to the sauce.
- Then enjoy.
