Spicy Turkey Pie with Sweet Potato Mash and boiled cauliflower

In my early twenties I worked in a local supermarket. I worked with a girl who every Christmas looked forward to Boxing Day. The day after Christmas day her mum would always make a curry with the leftover turkey. She loved her mums turkey curry and she would always talk about this dish just before Christmas.

With this thought in mind I decided to try a spicy turkey pie. In this version I used a sweet potato mash as a topping and it was delicious. I wanted to make a curry but I wanted it to be a bit different as I really enjoy trying new foods. Turkey is a very plain meat so you can add lots of flavours to your meal to make it tasty. Trust me, this is tasty!

Spicy Turkey Pie with Sweet Potato Mash

Equipment

  • Sharp knife
  • Chopping board
  • Nutribullet or blender
  • Large pans x 2
  • Plastic brush
  • Stirring spoon
  • Potato masher
  • Teaspoon
  • Pirex dish

Ingredients

  • Turkey x 500g (cooked or uncooked)
  • Leek x 1
  • Red pepper x 1
  • Courgettes x 2
  • Carrots x 2
  • Sweet Potatoes x 4 large
  • Coconut drink x 500ml
  • Mild or hot chilli powder x 1 – 2 tsp
  • Ginger x 1 inch piece
  • Dried lemongrass x 1 – 2 pieces
  • Garlic x 1 – 2 cloves
  • Pine nuts x 2 large handfuls
  • Kale, spinach or green beans x 2 handfuls
  • Salt and pepper to taste
  • Oil for the pan

Method

  • Preheat the oven to 180°C.
  • Pour the coconut drink into the Nutribullet or blender.
  • Add in the ginger, lemongrass, garlic (peeled) and the pine nuts.
  • Blend these ingredients until smooth and then set this aside.
  • Top and tail the leek and wash it under a cold tap.
  • Slice the leek thinly and set aside.
  • Cut the top from the pepper and remove the seeds.
  • Now slice the red pepper thinly.
  • Peel and slice the courgette and set this aside.
  • Next peel and chop the sweet potato into 1 inch chunks.
  • Then peel and chop the carrots into 2 cm pieces and set aside.
  • Now put the large pan on a high heat and add oil to the base.
  • Spread the oil around the base of the pan with the plastic brush as evenly as you can.
  • When the pan is hot, add in the leek and fry until they start to soft.
  • If using uncooked turkey, add this in now and fry until it’s golden brown.
  • Then add in the peppers and courgette and fry until they soften.
  • Pour in the blender mixture and bring to the boil.
  • If using cooked turkey, cut into bit sized pieces and place into the pan at this point.
  • Then put the kale, spinach or green beans in too.
  • Add salt and pepper to taste.
  • Turn the heat down and leave to simmer.
  • Put a large pan of water on the hob and bring to the boil.
  • Place the carrots into the water and bring to the boil again.
  • Turn the heat down and cook for 5 minutes.
  • Then add in the sweet potato and cook for a further 10 – 15 minutes or until the sweet potato is soft.
  • Note: you may need to turn the heat up and then back down again.
  • Once the potato falls from a fork, drain and put the piece back in the pan.
  • Mash all of these ingredients together using a little bit of olive oil and a milk of your choice.
  • Again add salt and pepper to taste.
  • Remove the filling of the pie from the heat.
  • Using the slotted spoon, spread the filling across the base of a dish.
  • Leave the liquid in the pan and use this as a gravy at the end.
  • Next spread the mashed potato on top as evenly as you can.
  • Then place the pie into the oven for 25 – 30 minutes.
  • Remove when the topping is golden brown.
  • Heat the sauce up again and serve with the pie.
  • Then enjoy.

Spicy Turkey Pie with Sweet Potato Mash was a simple dish to do but it was a time consuming meal. The effort was worth the results. I served this with a boiled cauliflower which accompanied the dish really well. We all enjoyed this dish and we would recommend it for those turkey leftovers this Christmas. Plus, it could be made and frozen for another occasion. Just in case you are a bit fed up of turkey by the end of December. However you decide to eat this dish, as always, enjoy.
