My husband is a huge Marmite fan but over the past few year we have been trying to find healthier versions of our favourite foods. Over a year ago now my husband and I were shopping in our local health food store and we stumble upon a yeast extract. The yeast extract was just as it said on the tin a ‘yeast extract’. There was no added nasties and so we decided to give it a try.
We were not disappointed by this product and we really enjoyed eating it. Even my 6 year old son is a yeast extract fan. Recently I decided to try this product in a few savoury meals. These pancakes were an idea I had when I was making my Sweet Potato Pancakes. I wondered what they would taste like with yeast extract. So I have given it a try and we were not displeased by this dish.

- Large bowls x 3
- Sharp knife
- Potato peeler
- Chopping board
- Small saucepan
- Metal spoon
- Nutribullet or blender
- Frying pan
- Ice cream scoop or a small ladle
- Fish slice
- Plastic brush
- Sweet potato x 200g
- Gluten free oats x 200g
- Ground flax seed x 50g
- Baking powder x 1 tsp
- Marmite or yeast extract x 2 tbsp
- Nutritional yeast x 2 tbsp (optional)
- Oat milk x 300mls
- Salt x 1/2 tsp
- Olive or sunflower oil to cook the pancakes in
- Grilled bacon to serve with
- Start by peeling the sweet potatoes and cut into 2 cm pieces.
- Place the small saucepan on the hob and add boiling water to it.
- Then place the colander on top and put the sweet potato pieces in it.
- Leave on the hob with the water simmering below for 15 -20 minutes.
- Put the oats into the nutribullet and blender until a flour forms.
- Meanwhile, mix the oat flour, baking powder, ground flax seed and salt.
- Once the sweet potato is cooked, add it to the blender along with the milk, yeast extract and nutritional yeast.
- Now blend all of these ingredient together.
- To make my life less stressful I make these on a Saturday night ready for Sunday morning.
- I have bowls with lids on so I can put it straight in the fridge.
- Put the frying pan on the hob on a high heat.
- Put a small amount of oil to the pan and use a plastic brush to cover the base.
- Take your ice cream scoop or ladle and fill it with pancake mixture and place it in the pan.
- Now wait until the pancake starts to cook around the outside.
- Give it a good minute or two minutes before flipping over.
- Hopefully they should be a nice golden brown colour.
- Wait for the other side to cook.
- Once they are cooked serve with grilled bacon and tomato ketchup or my homemade Tommy K and enjoy.
Savoury Sweet Potato and Marmite Pancakes were delicious. My husband and I thoroughly enjoyed eating these yummy pancakes. We served ours with bacon but my husband, Howard, suggested the pancakes would be good with a pouched or fried. I had a few leftovers for during the week so I decided to try the pancakes with a pouched egg on it. Howard was right, the yolk from the egg tasted amazing with the yeast extract and sweet potato. It’s one recipe we will be definitely be having again. However you decide to eat these pancakes, as always, enjoy. Thank you xxx
