Coronation Chicken Sandwiches were always a favourite of mine when I ate bread. Nowadays I am no longer able to eat gluten so instead I have started inventing my own recipes from the meals I used to enjoy. I have so much fun in my kitchen and I love to think of ways to make foods that I once enjoyed.
As I was wandering around our local supermarket I spotted a coronation chicken sandwich hanging out in the fridge. I have to admit it looked delicious and my mouth did water a little bit. As I was standing looking at the sandwich I suddenly had an idea to make a coronation chicken dinner. So I went home and made the meal below. It was so yummy that I just had to share it with you.

- Stirring spoon
- Food processor or nutribullet
- Baking tray
- Chicken breasts x 4
- Ground flax seed x 120g
- Garlic granules x 1 tsp
- Dried herbs x 1 tsp
- Olive oil x 4 – 6 tbsp
- Coconut cream or milk x 200mls
- Mango x 1 – 2 handfuls
- Turmeric x 1 centimetre piece or 1 tsp
- Fresh Coriander x 1 handful
- Salt and pepper to taste
- Preheat the oven to 180°C and put the baking tray in.
- Add the ground flax seed, garlic granules and dried mixed herbs to the mixing bowl.
- Mix these ingredients together.
- Pour in the olive oil and stir these ingredients together.
- Spread this mixture across the chicken breasts.
- Once the oven has preheated remove the baking tray.
- Place the chicken on the tray and put into the oven for about 25 – 30 minutes or until the juices run clear from the breast.
- Pour the coconut cream into the nutribullet cup or blender.
- Add in the mango, turmeric, fresh coriander and salt and pepper to taste.
- Blend all the ingredients together.
- Once the chicken has cooked, serve with the sauce and any carb and veg you fancy.
- Then enjoy.
GF, DF, EF and NF Breaded Chicken with a Coronation Sauce was a hit with my husband Howard. My son Ted, who is a fussy eater, wasn’t that much of a fan. So fifty percent of the family enjoyed this dish. I made this sauce as I was cooking the chicken. It could be made in advance of the meal and frozen if you don’t have much time. I also put the sauce on the side but it could be poured all over the meal like a gravy. However you decide to eat this meal, as always, please enjoy.
