For many months now I have been suffering with stomach aches and in the past I would have visited the doctor. Nowadays I’m not such a fan of going to the doctors. Instead I have opted to visited a Homeopath and Ayurvedic Health Care Practitioner.

Now I realise that many people would tell me I’m crazy and yes, those people would be correct. I’m mad as a hatter and I love it. However since I have been seeing these health care practitioners my stomach has settable and I have loads more energy. When I visited the doctor many years ago they gave me pills which made me feel worse than I did when I went there in the first place.

Trust me it hasn’t healed me but I can honestly say I feel a lot more like me than I did a few years ago. My diet has also had a major part to play in my health and well being. I’ve had to cut out a lot of sugar and most processed foods too. Although I have replaced processed foods with tasty meals. In the delicious dinners I like to include a lot of herbs and spices.

Since being on this journey I have discovered that coriander is a great stomach healer. It can help to promote good digestion and gut health. Nowadays I include this herb in at least 2 or 3 of our meals. Coriander can also reduce blood sugar and it’s rich in immune boosting antioxidants. Plus it can help with heart heath and may help to protect brain health too. It’s a fantastic herb to add to dinners and here are five meals you could try with coriander.

Coronation Chicken Sandwiches were always a favourite of mine when I ate bread. Nowadays I am no longer able to eat gluten so instead I have started inventing my own recipes from the meals I used to enjoy. I have so much fun in my kitchen and I love to think of ways to make foods that I once enjoyed.

As I was wandering around our local supermarket I spotted a coronation chicken sandwich hanging out in the fridge. I have to admit it looked delicious and my mouth did water a little bit. As I was standing looking at the sandwich I suddenly had an idea to make a coronation chicken dinner. So I went home and I made the meal below. It was so yummy that I just had to share it with you.

Chicken Katsu Curry

There’s a certain restaurant that sells Chicken Katsu Curry and it always seems quite popular. I have to admit before I made it at home, I had never eaten it in a restaurant. The only reason is I have a gluten intolerance and I have never seen a gluten free version of this meal. (Please forgive me if I’m wrong). Now there is a gluten free version of this dinner and I have the pleasure in sharing the recipe with you.

Homemade Falafel

For a long time now I have been meaning to try and make my own version of Falafel. On a trip to Costco a little while ago we found a brand that was making sweet potato Falafel so we decided to buy some to try it. It was delicious but I personally don’t think anything beats the taste of homemade.

It’s very cheap to make and very easy too. I brought dried chickpeas and soaked them overnight. My understanding is that dried chickpeas work a lot better than ones in the tin that have already been soaked. Dried chickpeas also save us money on the shopping bill. So this meal is yummy and cheap. What more could you want???

The past few years I have been on an interesting journey learning how I can heal my body. In that time I also learned that strawberries are a great stomach healer. As long as you are only feeling sick they can help to ease the pain. As well as this fruit, coriander and spinach are fantastic for the digestive system. I decided to add to the original recipe I was given. The results were amazing and I think they did help to ease the stomach aches too. It’s definitely one I will be having again.

One pot dinners are my favourite meals. The fact that there is not much washing up is occasionally a joy. I love to cook but there are times in my life when I just need an easy meal. This dish is definitely one of those dinners. Although there are two pans being used while cooking this dinner the frying pan could be washed up before serving. It makes this dinner seem like the elves and fairies have cooked it.
