
My son Ted and I are huge fish fans. The other day I noticed I had a lot of salmon dinners on my blog. So I thought I would write down five of our favourites for you. I’m very pleased that Ted loves salmon. I know when I serve him a big piece for dinner he will eat it all. Fish has always been a favourite of Ted’s and this pleases me.
Salmon is rich in omega-3, it’s loaded with B vitamins and it’s a great source of potassium. Salmon is an oily fish that has a lot of fatty acids which can help the body to thrive. There is also evidence that suggests eating salmon on a regular basis can help the brain. Eating Omega-3 regularly can help improve brain loss and even memory. These are the reasons I’m very pleased Ted loves fish and I invented all these recipes to keep that interest too. Ted and I love them and we hope you do too.
Tikka Salmon and Tomato Quinoa

My husband Howard, depending on how the fish is cooked, isn’t always so keen on these meals. Therefore I’m always trying to think of new ways to cook fish. As a family we try to eat fish at least twice a week. It’s always great to have variety in our meals. I was thinking about making a fish curry the other day. We eat curries quite often, especially at this time of year. Then I had a thought about tikka and I decided to try it with the salmon.
Salmon and Butter Bean Burgers
Fish and burgers are two of my son Ted’s favourite foods. Ted never really complains when I serve either of these for dinner. Plus Ted doesn’t mind eating a butter bean as well. Therefore when I put all of these ingredients together I felt like a magician. Ted always tells his father and I at any meal that he doesn’t eat vegetables. I feel that he thinks this should be common knowledge, and that he shouldn’t have to tell me every time I put vegetables on his plate. I tell Ted he doesn’t try them enough to know if he doesn’t like them. It doesn’t wash, but it’s worth a try. It’s why I like beans so much and I like that Ted enjoys beans too. They are vegetables and Ted hasn’t realised . . . yet.
Chinese is one of our favourite meals to cook as it is quick and easy. For me, it means I don’t have to spend hours slaving over a hot stove which I don’t have much time to do during the week with a small boy around. As a mum I need meals to be on the table in minutes and cooking a Chinese is one of those dinners.
For our meal I chose salmon and I grilled the fish. I then added the fish to the teriyaki sauce and the vegetables. So I know it’s probably not the way it’s done in Japan nor China but it was yummy. My son Ted and husband Howard, thoroughly enjoyed this meal. There were clean plates the night this was served.
Salmon in a Cheesy ‘No Cheese’ Parsley Sauce
Whenever I see fish in a parsley sauce it always reminds me of my mother in law. It was one of her staple dishes for her bi weekly menu. As I am gluten intolerant and I’m not to great on cheese either, I’m always searching for alternatives.
Since discovering cashew nut cream cheese, I have found lots of ways to use it in my recipes. I found myself thinking about my mother in law the other day and the meals she used to make when my father in law was alive. Then I thought about using the cashew nut cream cheese as a replacement cheese sauce. At the time I was unsure of using the parsley but I’m so pleased I did. It was delicious and well worth a try.
Slow Cooked Salmon Noodle Soup
A few weeks ago I made our family a slow cooked chicken noodle soup and my son ate the whole meal. My son Ted is normally a very fussy eater but the noodle soup was very well received. So I decided to try this delicious dish with salmon.
The salmon gave the dish a very different flavour which was equally as yummy. I made sure to use a lot more stock for this dish and I did change a few of the key ingredients to bring out the taste of the fish. My son loves fish and this was easily one of his favourites.
Nowadays, if I mention noodles for dinner, my son is the first person at the table. It’s definitely become one of his new favourite dinners. As long as I cut the noodles into pieces for Ted to eat he’s a happy boy. It’s a delicious dinner that the whole family will enjoy.

These 5 salmon dinners are quick and simple. As a busy mum there are times when I need easy but healthy meals to put on the table. As I mentioned my son is a huge fan of fish, especially salmon.
